Brunch has always been one of my favourite meals. Especially on Lazy Sundays. This is the perfect treat for the end of the your week. Easy to make and even better to eat! A great combinations of salty and sweet, it’s just heaven!
FOR THE BATTER:
225g/8oz plain flour
2 medium eggs
Up to 500ml/17fl oz milk
FOR THE FILLING:
250g/9oz good quality butter
2 Tablespoons Maple Bacon Jam
Dolce de Leche or caramel sauce
6-8ripe bananas, sliced
1 Pack streaky bacon
Sieve the flour and beat in the eggs. Beat in the milk a little at a time until the batter has the consistency of single cream. Leave to stand for at least half an hour before making the pancakes.
Stir Dolce de Leche or caramel sauce consistently over a low heat until sauce is smooth. It shouldn’t boil but should be nice and hot.
Fry the pancakes and when bubbles appear, and here comes the fun bit, flip the pancake. Stack the pancakes on top of each other and keep them warm in the oven on a low setting.
Fry off the bacon in a high heat frying pan. Cook until crispy.
Cut the bananas lengthways and place in the middle of each pancake. Put a generous helping of the caramel sauce on top and roll the pancake closed.
Serve with ice cream and drizzle some more sauce over the whole lot.
